Sea Salt Ice Cream
Ingredients
- 120 g granulated sugar
- 5 egg yolks
- 220 g cream
- 220 g milk
- 7 g sea salt
Instructions
- Beat the sugar and egg yolks and until it thickens and lightens in colour.
- Bring the milk to a low simmer.
- Beat the milk into the egg/sugar mixture in a slow stream.
- Pour the mixture back into the pan and place over low heat.
- Stir continuously until the custard thickens slightly (around 65-70C) and just coats the back of a spoon. Don’t over-heat, though, because at around 76C you will scramble the eggs!
- Immediately remove from the heat.
- Allow to cool.
- Stir in the salt.
- Whip the cream until it has doubled in volume (you should have soft peaks – don’t over-whip).
- Fold (gently stir) in the custard.
- Freeze using a domestic ice cream machine.
Testing Notes
- The original recipe calls for 2 tsp homemade sea salt. They recommended using 20% less if using Maldon, which is only about 0.7 g per ¼ tsp (5.6 g total). I upped this to around 1% by weight of other ingredients.
