Fermented Garlic Paste
Ingredients
- 8 heads garlic
- 1 tsp lacto-fermentation brine (e.g., sauerkraut, kimchi, garlic paste)
- 2.5% salt (non-iodized), by weight
Instructions
- Separate and peel all heads of garlic.
- Add garlic, brine, and salt to a food processor. Process to a paste consistency.
- Transfer garlic to a sanitized quart jar, packing it down to eliminate any trapped air pockets.
- Place an empty, open Ziploc bag inside the jar so the bottom of the bag rests flat directly on top of the garlic paste.
- Pour salt into the Ziploc bag—the weight of the salt will mold the bag to the shape of the jar and flatten it against the paste, minimizing air contact.
- Invert the opening of the Ziploc bag over the rim of the jar. Wrap a rubber band tightly around the neck of the jar to seal and hold the bag in place.
- Ferment at room temperature, out of direct sunlight, for 14-21 days. Burp by breaking the seal made by the rubber band occasionally, if needed.
- Transfer to refrigerator.
