Bacon, Egg, and Cheese Ramen
Ingredients
- 2 servings ramen noodles
- 2 large eggs
- 2 egg yolks
- 2 slices bacon, cut into matchsticks
- 3 green onions, sliced thinly
- 0.25 tsp Hon Dashi
- 1 tsp chicken Better Than Bouillon
- 0.25 cup sake
- 1 tsp soy sauce
- 1 tbsp brown sugar
- 2 tsp rice vinegar
- 2 slices American cheese
- 8-min [egg brûlée](/recipes/egg-brulee) (optional)
Instructions
- Fry bacon until crisp. Reserve 1 tbsp bacon fat.
- Combine Hon Dashi, bouillon, sake, soy sauce, and brown sugar. Reduce in a pan until syrupy. Let cool.
- Once cool, whisk in eggs, yolks, and 1 tbsp rendered bacon fat. Add rice vinegar.
- Cook noodles (in lightly salted water). Drain and return to pan.
- Like with carbonara, add egg mixture to noodles and stir over very low heat until thickened.
- Top with bacon, green onions, and a slice of American cheese.
Notes
- This recipe contains raw eggs. If needed, use pasteurized eggs.
Testing Notes
- Last attempt was too salty. Reduced bouillon from 0.5 tbsp to 1 tsp. Reduced soy sauce by half.
